Kanab Catering
in the red rock and off the grid

Catering in Kanab isn't catering anywhere else. The production-crew lunch plates on a film set with no kitchen in sight; the elopement dinner plates on a canyon overlook with no power and no running water; the wedding at Amangiri sits a hundred desert miles from the nearest specialty purveyor. Your team has to master the remote high desert — where premium proteins and sushi-grade seafood arrive only by managed cold-chain, where summer heat past 100°F rewrites the menu, and where a compact ranch kitchen has to turn out a full multi-course dinner.

MileHighCook caters across Kanab, Mount Carmel, Orderville, East Zion, and Canyon Point — plus Fredonia, Johnson Canyon, and red-rock ranch and canyon estates on both the Utah and Arizona sides. From red-rock destination weddings and elopements near East Zion and canyon-overlook ceremonies above Johnson Canyon, to film and production-shoot catering rooted in Kanab's Little Hollywood heritage, to multi-day chef service at a canyon ranch estate. Peak spring and fall weeks should land 3-6 months out; weddings 9-12. Get a custom quote →

Every Menu, Custom-Built From Scratch

These are starting points, not packages. Most caterers and private chefs lock you into a small set of pre-built menus. We don't. Every MileHighCook menu is designed around your guests, your venue, your season, and your story. The dishes below are inspirations — what we might build for you.

Wagyu New York
Live-Fire Steakhouse, Elevated

Wagyu New York

Dry-aged Wagyu, charred allium purée, smoked bone marrow jus, wood-fired vegetables. Could be reimagined with seasonal lamb or 14-day dry-aged ribeye.

Hokkaido Scallop Crudo
Coastal · Light · Refined

Hokkaido Scallop Crudo

Day-flown scallop, yuzu-kosho, finger lime, shiso oil. As one example of what's possible with sushi-grade fish flown in for a private dinner.

Black Truffle Risotto
Italian · Indulgent · Seasonal

Black Truffle Risotto

Carnaroli rice, aged Parmigiano, fresh black truffle shaved tableside (when in season). One direction for an Italian-inspired evening.

Whole-Roasted Cauliflower
Plant-Forward · Vibrant · Seasonal

Whole-Roasted Cauliflower

Heirloom cauliflower, brown butter dukkah, herbed labneh, charred lemon. A vegan-capable centerpiece that holds its own at any table.

Crispy Duck Breast
French Technique · Dramatic Plating

Crispy Duck Breast

Crispy-skin duck, cherry gastrique, parsnip purée, pickled mustard seed. As a starting point for a plated multi-course sunset dinner on a canyon overlook.

Caviar Service
Cocktail Hour · Show-Stopping

Caviar Service

Royal Ossetra, traditional accoutrements, blini, crème fraîche. One of countless ways we can elevate a cocktail hour or welcome reception.

How It Works

From Inquiry to Unforgettable Event

A premium, white-glove process from your first message to the final tasting. Built around real conversations — not marketplaces or generic templates.

01

Inquire

Submit the form above or call us directly.

Marketplaces send your inquiry to 5 vendors at once.

02

Conversation

A 15-minute call with Chef Steve to understand your event, venue, guests, and vision.

Resort F&B teams typically work through a sales coordinator.

03

Proposal

Within 24 hours: fully detailed, All-Inclusive proposal. Custom-built around your event.

Most catering proposals take 5-10 days to assemble.

04

Lock In

Once approved: structured questionnaire, contract, and (if requested) tasting scheduled.

High-volume operators often skip the questionnaire entirely.

05

Deposit & Schedule

A deposit secures your date. Walkthrough, final menu refinement, and service planning.

Concierge services often add a 20-25% markup.

The MileHighCook Difference

Three Principles, Every Event

While most marketplaces, resort F&B teams, and volume operators rely on coordinators or printed banquet sheets, every MileHighCook event is built around three principles.

One Chef,
Not a Coordinator

Chef Steve plans and runs every event personally. No sales coordinator. No sub-contractor. The person you talk to on day one is the person on-site the night of.

Your Menu,
Not Their Banquet Sheet

Every menu built from scratch around your guests, your venue, your season. No package tiers. No printed banquet kit. No “pick three from column A.” Yours, not ours.

One Number,
Up Front

Full all-inclusive proposal within 24 hours. Chef, ingredients, service staff, equipment, cleanup — one number, no add-ons after the fact.

For peak spring and fall weeks, plan 3-6 months ahead. Red-rock destination weddings and elopements at Amangiri (Canyon Point), East Zion lodges, and canyon ranch estates typically book 9-12 months out, and spring and fall are the prime wedding window. One-off dinners 2-4 weeks ahead. The earlier you start the conversation, the more menu and team flexibility you have.
Yes — this is core to how we work in Kanab's canyon country. Ranch and canyon-estate kitchens are compact, outdoor overlook and dune setups have limited power and water, and most vacation homes were never built to plate for a crowd. We bring full mobile setup including burners, prep tables, and managed refrigeration, and we design service around off-grid and outdoor high-desert conditions.
Our All-Inclusive proposal includes: chef and culinary team, all ingredients and shopping, prep, cooking, plating, professional table service, equipment and rental needs (plates, glassware, linens when required), and complete post-event cleanup. No hidden fees or surcharges.
Kanab has limited grocery — a small-town market and long distances to a full supermarket. Premium proteins, sushi-grade seafood, and specialty produce are pre-sourced and brought in under managed cold-chain across long desert distances. Getting restaurant-quality ingredients to remote canyon country safely is a defining Kanab skill, and it's built into every proposal.
Summer temperatures around Kanab routinely top 100°F, which reshapes food safety, menu design, and outdoor plating. We lean into lighter, hydrating, chilled and raw-bar service, hold cold-chain all the way to the ranch, canyon, or dune site, and time service so every course reaches the table at its best.
Yes. Professional service staff is included in the All-Inclusive pricing — typically 1 server per 8-10 guests for plated service, more for stations or family-style. Bartender service available on request.
Tastings are scheduled as requested, typically after deposit. They are optional — many clients prefer to skip the tasting and use the time and budget toward the event itself. When held, we come to your home or venue with a 4-6 course tasting and optional wine pairing to refine the final menu.
We serve Kanab, Fredonia, Mount Carmel, Orderville, Canyon Point (Amangiri), East Zion, Coral Pink Sand Dunes, Johnson Canyon, and canyon ranch and estate venues across the Kanab canyon country on both the Utah and Arizona sides. Travel surcharges are never added separately — all distance is built into the All-Inclusive proposal.
Yes — this is part of our All-Inclusive pricing. We coordinate rentals for linens, china, glassware, tables, and chairs as needed, and the cost is folded into the proposal up front. For dining at a well-equipped canyon estate or ranch, fewer rentals are needed.
Reschedules are handled case-by-case. Generally: 90+ days out, full deposit transfers to the new date with no penalty. 30-90 days, partial transfer with re-stocking adjustment. Less than 30 days, depends on date availability and ingredient lead time.
