Catering in Deer Valley, Utah·A Local Lens

Deer Valley Catering
for the most consistently luxury-positioned ski resort in the US

Deer Valley is Park City's explicitly luxury-only sister resort — no snowboarders, only skiers; no all-day food carts, only fine dining. The most consistently luxury-positioned ski resort in the country. Heavy California, Texas, and East Coast UHNW demographic. Stein Eriksen Lodge, Montage Deer Valley, the St. Regis Deer Crest, and the new Mayflower expansion anchor a hospitality tier where private-chef-led estate hosting is more limited than demand — resort F&B is uniformly excellent (Mariposa, Glitretind, Royal Street Cafe, Apex), but slopeside residence catering at the UHNW level is the under-supplied segment.

MileHighCook caters across Empire Pass (slopeside, the gold-standard residential corridor), Deer Crest (St. Regis-anchored, gated), Silver Lake Village, the Montage Residences corridor, the Stein Eriksen Residences, and the Mayflower expansion. Wine-pairing programs are sophisticated here — Deer Valley clients are among the most wine-literate in our footprint — and the cuisine vocabulary leans Wagyu and dry-aged beef, sushi-grade seafood, modern Japanese-influenced, and Mediterranean. SLC airport is the most accessible major airport in the Mountain West (45 minutes), which keeps both the client travel calendar and the specialty ingredient supply chain unusually responsive. Restaurant-Level Catering,
Slopeside Residence Sensibility

MileHighCook's Deer Valley catering covers every detail — from custom menu and wine-program design through full kitchen execution at slopeside Empire Pass and Deer Crest residences, professional service staff, equipment rentals when ski-in/ski-out logistics call for them, and complete post-event cleanup. Wine-pairing rigor is a defining Deer Valley expectation — the client base here is among the most sophisticated about wine in our footprint, and the program (cellar releases, vintage Bordeaux, Burgundy, modern Napa, Pacific Northwest Pinot) is treated as a peer of the food rather than an accompaniment.

Whether you're hosting a 200-guest destination wedding at Stein Eriksen Lodge or Montage Deer Valley, a 24-guest Sundance overflow private dinner during festival week at an Empire Pass residence, an 80-guest Deer Valley Music Festival patron reception, a 14-guest multi-night anniversary residency at a Deer Crest home, or a 60-guest tech executive offsite at a Silver Lake Village estate, our All-Inclusive approach means one transparent quote with no hidden add-ons. We work in private slopeside residences, Stein Eriksen Lodge, Montage Deer Valley, the St. Regis Deer Crest, Empire Canyon Lodge, Silver Lake Lodge, and the Mayflower expansion's new venue inventory.

Catering Services in Deer Valley

Slopeside Estate, Destination Wedding & Festival Patron

01

Slopeside Estate Hosting

Private-chef-led estate catering inside Empire Pass, Deer Crest, and the Montage and Stein Eriksen Residences. The under-supplied segment of the Deer Valley market — the resorts handle their own F&B, but UHNW residences hosting their own circles are where we add the most value. Multi-night chef-in-residence formats are common.

UHNW Slopeside
02

Destination Wedding

100-250 guest destination weddings at Stein Eriksen Lodge, Montage Deer Valley, the St. Regis Deer Crest, Empire Canyon Lodge, and slopeside private residences. One of the highest-spend US wedding markets — total spend typically $400k-$2M+ all-in. Strong June-September peak with a meaningful winter wedding micro-season.

$400k-$2M+ Spend
03

Sundance Overflow & Music Festival

Mid-to-late January studio and brand hosting when Park City Old Town and slopeside PC accommodations book out, plus Deer Valley Music Festival patron dinners (Utah Symphony's outdoor July-August series — one of the most distinctive Utah summer events). Both are tightly seasonal and both drive deep advance booking demand.

Every Menu, Custom-Built From Scratch

These are starting points, not packages. Most caterers and private chefs lock you into a small set of pre-built menus. We don't. Every MileHighCook menu is designed around your guests, your venue, your season, and your story. The dishes below are inspirations — what we might build for you.

Wagyu New York
Mountain Steakhouse, Elevated

Wagyu New York

Dry-aged Wagyu, charred allium purée, smoked bone marrow jus, root-vegetable hash. Could be reimagined with seasonal Colorado lamb or 14-day dry-aged ribeye.

Hokkaido Scallop Crudo
Coastal · Light · Refined

Hokkaido Scallop Crudo

Day-flown scallop, yuzu-kosho, finger lime, shiso oil. As one example of what's possible with sushi-grade fish flown in for a private dinner.

Black Truffle Risotto
Italian · Indulgent · Seasonal

Black Truffle Risotto

Carnaroli rice, aged Parmigiano, fresh black truffle shaved tableside (when in season). One direction for an Italian-inspired evening.

Whole-Roasted Cauliflower
Plant-Forward · Vibrant · Seasonal

Whole-Roasted Cauliflower

Heirloom cauliflower, brown butter dukkah, herbed labneh, charred lemon. A vegan-capable centerpiece that holds its own at any table.

Crispy Duck Breast
French Technique · Dramatic Plating

Crispy Duck Breast

Crispy-skin duck, cherry gastrique, parsnip purée, pickled mustard seed. As a starting point for a plated multi-course winter dinner.

Caviar Service
Cocktail Hour · Show-Stopping

Caviar Service

Royal Ossetra, traditional accoutrements, blini, crème fraîche. One of countless ways we can elevate a cocktail hour or welcome reception.

The MileHighCook Difference

Deer Valley Catering, Built Around You

While most marketplaces, resort F&B teams, and volume operators rely on coordinators or printed banquet sheets, every MileHighCook event is built around three principles.

One Chef,
Not a Coordinator

Chef Steve plans and runs every event personally. No sales coordinator. No sub-contractor. The person you talk to on day one is the person on-site the night of.

Your Menu,
Not Their Banquet Sheet

Every menu built from scratch around your guests, your venue, your season. No package tiers. No printed banquet kit. No “pick three from column A.” Yours, not ours.

Christmas-New Year and Presidents' Week ski-residency hosting at Empire Pass and Deer Crest typically books 9-12 months ahead, with the most desired estates going closer to 12-18 months. Sundance Film Festival overflow (mid-to-late January) is among the tightest weeks of the entire Utah calendar — studios and brands begin reserving Deer Valley estates in October-November of the prior year. Destination weddings (June-September peak, plus a winter wedding micro-season) typically lock 12-18 months out for Stein Eriksen and Montage Saturday dates. Deer Valley Music Festival patron hosting (July-August) books 4-6 months ahead. Earlier is materially better here than in less-demand markets.
Yes — private slopeside residences inside Empire Pass, Deer Crest, the Montage and Stein Eriksen Residences are the largest piece of our Deer Valley scope. The hotel properties (Stein Eriksen, Montage, St. Regis) run sophisticated in-house F&B; what we typically run there is overflow events, weekend buyouts where the client wants a chef-led private dining experience separate from the hotel's program, and destination wedding rehearsal dinners and welcome receptions tied to a hotel ceremony. Empire Canyon Lodge and Silver Lake Lodge are recurring venues for larger functions.
Our All-Inclusive proposal covers chef and culinary team, all ingredients (sourced via the SLC supply chain — one of the most responsive in the Mountain West given Deer Valley's airport access), wine-program coordination, prep, cooking, plating, professional table service (servers, sommeliers, bartenders), equipment and rental needs for slopeside residence kitchens, ski-in/ski-out logistics, and complete post-event cleanup. No hidden fees, no shopping surcharges, no add-ons after the fact.
Wine pairing is treated as a peer of the food here, not an accompaniment, and we calibrate accordingly. Deer Valley clients are among the most wine-literate in our footprint — Bordeaux verticals, Burgundy collections, modern Napa, vintage Champagne, and Pacific Northwest Pinot all show up routinely in cellar consultations. We coordinate with the client's cellar (or our suggested program), design courses to flatter what's being poured, and bring sommelier-level service when the format calls for it. For Music Festival hosting and weddings, we run parallel wine and beverage programs at scale.
Sourcing is one of our Deer Valley advantages — SLC is 45 minutes away and has the most responsive specialty ingredient supply chain in the Mountain West. Wagyu, dry-aged proteins, sushi-grade seafood, French and Italian specialty products, and same-day European cheese imports are routine rather than tight. Local Utah producers (lamb, produce, grass-fed beef) round out the program. The combination of resort luxury and major-airport adjacency makes Deer Valley logistically the easiest mountain market in the West.
Yes. Gluten-free, dairy-free, nut-free, vegan, performance-aligned (a real Deer Valley specialty given the US Ski Team training presence), keto, Bay-Area-style organic-forward, anti-inflammatory, and complex layered family restrictions are all standard. Sophisticated brand-and-sourcing specificity (clients asking for particular farms, particular fisheries) is more common here than in other markets, and we lean into that.
Yes — Sundance overflow (mid-to-late January) is a defined Deer Valley specialty for us. Studios and brands renting Empire Pass and Deer Crest estates as overflow when Park City Old Town and slopeside PC accommodations max out drive substantial private hosting demand. Multi-day chef-in-residence stays for film executives, brand activation dinners hosted at slopeside residences, and 20-50 guest evening dinners are the most common formats. The week is the tightest on the Deer Valley calendar — book early.
Yes — confidentiality clauses and NDAs are standard for our Deer Valley work. Sundance week studio and film-industry hosting, multi-generational UHNW family compounds, PE and tech executive retreats, and high-discretion family-office hosting all routinely involve discretion requirements. Tell us your standards and we'll execute accordingly.
We serve Empire Pass, Deer Crest, Silver Lake Village, the Montage Deer Valley Residences corridor, the Stein Eriksen Residences, the Mayflower expansion, and Park City summit residences within the Deer Valley boundary. Travel between Park City Old Town and the Deer Valley summit corridor is part of our routine logistics rather than a surcharge.
Reschedules are handled case-by-case. Generally: 90+ days out, full deposit transfers to the new date with no penalty. 30-90 days, partial transfer with a re-stocking adjustment. Less than 30 days, the available remedy depends on the date, the wine and ingredient sourcing already in motion, and team scheduling. Sundance overflow week and Christmas-New Year reschedules are particularly tight given the demand peaks — we'll always be transparent about what's possible.
