Reschedules are handled case-by-case. Generally: 90+ days out, full deposit transfers to the new date with no penalty. 30-90 days, partial transfer with re-stocking adjustment. Less than 30 days, depends on date availability and ingredient lead time. Wedding-week and Christmas-week reschedules are particularly tight given the demand window and multi-day ingredient sourcing already in motion.
