Catering in Aspen, Colorado·A Local Lens

Aspen Catering
for the most discerning week of the year

Aspen catering operates at a different pressure level than anywhere else in the Mountain West. The Food & Wine Classic in mid-June draws celebrity chefs, wine industry leaders, and a UHNW patron class — brand activation dinners and private hosting hit extraordinary spend levels. The Aspen Ideas Festival a week later draws Fortune 500 CEOs, cabinet officials, and foreign heads of state to the Aspen Meadows campus and to private dinners hosted by speakers' patrons. The Aspen Security Forum (mid-July) and ArtCrush (early August) extend the season further.

MileHighCook caters across Red Mountain, the West End, Starwood, Castle Creek, Maroon Creek Club, and Snowmass — plus Woody Creek, Old Snowmass, and Basalt. From Food & Wine Classic week brand activations to Ideas Festival speaker dinners, ArtCrush donor cultivation events, and Christmas-week multi-day chef residencies on Red Mountain. Holiday-week and festival-week bookings should land 6-12 months out. Confidentiality is built in. Request a custom proposal →

Restaurant-Level Catering,
Off-the-Books Discretion

MileHighCook's Aspen catering covers every detail — from custom menu design and grocery sourcing to full kitchen execution at private estates with non-commercial kitchens, professional service staff, equipment rentals when needed, and complete post-event cleanup. Tasting menu format with wine pairing is the default expectation; clients here benchmark against Per Se, French Laundry, and Eleven Madison Park.

Whether you're hosting a 25-guest LP dinner during Ideas Festival or a 200-person wedding reception on Red Mountain, our All-Inclusive approach means one transparent quote with no hidden add-ons. We work in private homes, vacation rentals, hotel residences (Hotel Jerome, The Little Nell, St. Regis), and event spaces throughout Aspen, Snowmass, and the broader Roaring Fork Valley.

Every Menu, Custom-Built From Scratch

These are starting points, not packages. Most caterers and private chefs lock you into a small set of pre-built menus. We don't. Every MileHighCook menu is designed around your guests, your venue, your season, and your story. The dishes below are inspirations — what we might build for you.

Wagyu New York
Mountain Steakhouse, Elevated

Wagyu New York

Dry-aged Wagyu, charred allium purée, smoked bone marrow jus, root-vegetable hash. Could be reimagined with seasonal Colorado lamb or 14-day dry-aged ribeye.

Hokkaido Scallop Crudo
Coastal · Light · Refined

Hokkaido Scallop Crudo

Day-flown scallop, yuzu-kosho, finger lime, shiso oil. As one example of what's possible with sushi-grade fish flown in for a private dinner.

Black Truffle Risotto
Italian · Indulgent · Seasonal

Black Truffle Risotto

Carnaroli rice, aged Parmigiano, fresh black truffle shaved tableside (when in season). One direction for an Italian-inspired evening.

Whole-Roasted Cauliflower
Plant-Forward · Vibrant · Seasonal

Whole-Roasted Cauliflower

Heirloom cauliflower, brown butter dukkah, herbed labneh, charred lemon. A vegan-capable centerpiece that holds its own at any table.

Crispy Duck Breast
French Technique · Dramatic Plating

Crispy Duck Breast

Crispy-skin duck, cherry gastrique, parsnip purée, pickled mustard seed. As a starting point for a plated multi-course winter dinner.

Caviar Service
Cocktail Hour · Show-Stopping

Caviar Service

Royal Ossetra, traditional accoutrements, blini, crème fraîche. One of countless ways we can elevate a cocktail hour or welcome reception.

How It Works

From Inquiry to Unforgettable Event

A premium, white-glove process from your first message to the final tasting. Built around real conversations — not marketplaces or generic templates.

01

Inquire

Submit the form above or call us directly.

Marketplaces send your inquiry to 5 vendors at once.

02

Conversation

A 15-minute call with Chef Steve to understand your event, venue, guests, and vision.

Resort F&B teams typically work through a sales coordinator.

03

Proposal

Within 24 hours: fully detailed, All-Inclusive proposal. Custom-built around your event.

Most catering proposals take 5-10 days to assemble.

04

Lock In

Once approved: structured questionnaire, contract, and (if requested) tasting scheduled.

High-volume operators often skip the questionnaire entirely.

05

Deposit & Schedule

A deposit secures your date. Walkthrough, final menu refinement, and service planning.

Concierge services often add a 20-25% markup.

The MileHighCook Difference

Aspen Catering Without the Coordinator Layer

While most marketplaces, resort F&B teams, and volume operators rely on coordinators or printed banquet sheets, every MileHighCook event is built around three principles.

One Chef,
Not a Coordinator

Chef Steve plans and runs every event personally. No sales coordinator. No sub-contractor. The person you talk to on day one is the person on-site the night of.

Your Menu,
Not Their Banquet Sheet

Every menu built from scratch around your guests, your venue, your season. No package tiers. No printed banquet kit. No “pick three from column A.” Yours, not ours.

One Number,
Up Front

Full all-inclusive proposal within 24 hours. Chef, ingredients, service staff, equipment, cleanup — one number, no add-ons after the fact.

Christmas-New Year, Presidents' Week, and X Games week are the highest-demand windows and should book 9-12 months ahead. Food & Wine Classic, Aspen Ideas Festival, Aspen Security Forum, and ArtCrush hosting typically books 6-9 months out. Summer wedding season is similar. Off-season events 2-4 months ahead. The earlier you start the conversation, the more menu and team flexibility you have.
Yes — this is the bulk of our Aspen work. Red Mountain estates ($20M+ tier), Starwood gated mountainside compounds, West End historic Victorians, and Maroon Creek Club residences are all regular venues. Many of these homes have professional kitchens; for those without, we bring full mobile kitchen setup. Hotel Jerome, The Little Nell, and St. Regis residences are also regular venues.
Our All-Inclusive proposal covers chef and culinary team, all ingredients and shopping, prep, cooking, plating, professional table service (servers, bartenders, attendants), equipment and rental needs (plates, glassware, linens when required), and complete post-event cleanup. No hidden fees or surcharges.
Yes — confidentiality clauses and NDAs are standard for Aspen work. UHNW family events, hedge fund offsites, Aspen Security Forum private dinners, and entertainment-industry hosting all routinely involve discretion requirements. Tell us your standards and we'll execute accordingly.
Aspen sits at 7,908 ft, which materially changes how proteins cook, how baked goods rise, and timing on multi-course service. Our chef team is trained on altitude-adjusted technique, and we plan service timing accordingly. Snowmass at 8,200+ ft requires the same considerations.
Yes. Gluten-free, dairy-free, nut-free, vegan, kosher-style, and complex layered restrictions (e.g., gluten + dairy + nightshade-free) are standard. We confirm every dietary requirement during the questionnaire phase and design parallel menus when needed. The Aspen wellness scene is sophisticated; layered dietary asks are routine here.
Yes. Festival-week catering is a core category for us — brand activations, sponsor dinners, speaker hosting, donor cultivation events, and after-hours private dinners are all regular work during F&W Classic, Ideas Festival, Security Forum, and ArtCrush weeks. We coordinate timing, security requirements, and sponsor logistics with your activation team or planner.
Tastings are scheduled as requested, typically after deposit. They are optional — many Aspen clients prefer to skip the tasting and use the time and budget toward the event itself. When held, we come to your home or venue with a 4-6 course tasting and optional wine pairing to refine the final menu.
We serve Aspen Core, Red Mountain, West End, Starwood, Castle Creek, Maroon Creek Club, Snowmass Village, Snowmass, Woody Creek, Old Snowmass, Basalt, and the broader Pitkin County area. Travel surcharges are never added separately — all distance is built into the All-Inclusive proposal.
Reschedules are handled case-by-case. Generally: 90+ days out, full deposit transfers to the new date with no penalty. 30-90 days, partial transfer with re-stocking adjustment. Less than 30 days, depends on date availability and ingredient lead time. Festival-week reschedules are particularly tight given the demand window.
