Sundance Catering
for Robert Redford's conservation-rooted creative retreat

Sundance is a tiny, distinctive market — Robert Redford's Sundance Mountain Resort and the surrounding Provo Canyon area. The resort itself is the gravitational center, with year-round Sundance Institute programming (Director's Lab, Screenwriter's Lab, Theatre Lab — entirely separate from the Park City film festival), a small affluent year-round resident community in Aspen Grove, and ranch properties extending toward Heber and Midway. Demographically distinct from Park City and Deer Valley: quieter, more art-and-conservation-oriented, with a longer family-tradition footprint among visitors.

MileHighCook caters across Sundance Mountain Resort residences, Aspen Grove, Provo Canyon, and the ranch and estate properties extending toward Heber City and Midway. Sundance's creative-conservation ethos shapes catering expectations directly — sustainability and locavore programming are real client expectations rather than marketing language, and plant-forward menus are the norm rather than an accommodation. Most Sundance hosting still defaults to Sundance Resort F&B (the Tree Room and the Owl Bar are local institutions); private estate catering at Aspen Grove and Provo Canyon residences is the under-supplied segment we cover. Restaurant-Level Catering,
Locavore & Conservation-Aligned

MileHighCook's Sundance catering covers every detail — from custom menu design and Utah Valley locavore sourcing through full kitchen execution at private homes, Sundance Mountain Resort residences, or the Sundance Outdoor Pavilion, professional service staff, equipment rentals where the venue calls for them, and complete post-event cleanup. Plant-forward programming is the default, not an accommodation — the Sundance client base has refined preferences around sourcing, sustainability, and seasonality, and the menus are built to match.

Whether you're hosting a 60-guest Sundance Institute Director's Lab participant dinner, a 30-guest filmmaker mentor reception, an 80-guest mountain wedding at the Sundance Outdoor Pavilion, a 24-guest conservation-philanthropy patron dinner at an Aspen Grove residence, or a smaller intimate anniversary residency during the December-January family hosting window, our All-Inclusive approach means one transparent quote with no hidden add-ons. We work in private residences, Sundance Mountain Resort venues, the Sundance Outdoor Pavilion, the Tree Room, and ranch properties extending toward Heber and Midway.

Institute Lab, Mountain Wedding & Conservation Patron

01

Sundance Institute Lab Hosting

Year-round Sundance Institute programming — Director's Lab (June), Screenwriter's Lab, Theatre Lab — brings filmmakers, mentors, and patrons in for multi-day creative residencies. Lab-week dinners are quieter and more intimate than festival hosting, and the menu sensibility is locavore-aligned by participant expectation.

Year-Round Institute Calendar
02

Mountain Wedding

60-150 guest mountain weddings at the Sundance Outdoor Pavilion, Sundance Mountain Resort venues, and private Aspen Grove and Provo Canyon estates. Smaller market than Park City but high per-event spend — Sundance weddings tend toward intimate-but-elevated rather than scaled.

Up to 150 Guests
03

Conservation & Arts Patron

Sundance Author Series patron dinners, conservation-philanthropy donor cultivation events, and arts-organization fundraisers tied to Sundance Institute and aligned conservation foundations. Plant-forward locavore menus are the default expectation.

Every Menu, Custom-Built From Scratch

These are starting points, not packages. Most caterers and private chefs lock you into a small set of pre-built menus. We don't. Every MileHighCook menu is designed around your guests, your venue, your season, and your story. The dishes below are inspirations — what we might build for you.

Wagyu New York
Mountain Steakhouse, Elevated

Wagyu New York

Dry-aged Wagyu, charred allium purée, smoked bone marrow jus, root-vegetable hash. Could be reimagined with seasonal Colorado lamb or 14-day dry-aged ribeye.

Hokkaido Scallop Crudo
Coastal · Light · Refined

Hokkaido Scallop Crudo

Day-flown scallop, yuzu-kosho, finger lime, shiso oil. As one example of what's possible with sushi-grade fish flown in for a private dinner.

Black Truffle Risotto
Italian · Indulgent · Seasonal

Black Truffle Risotto

Carnaroli rice, aged Parmigiano, fresh black truffle shaved tableside (when in season). One direction for an Italian-inspired evening.

Whole-Roasted Cauliflower
Plant-Forward · Vibrant · Seasonal

Whole-Roasted Cauliflower

Heirloom cauliflower, brown butter dukkah, herbed labneh, charred lemon. A vegan-capable centerpiece that holds its own at any table.

Crispy Duck Breast
French Technique · Dramatic Plating

Crispy Duck Breast

Crispy-skin duck, cherry gastrique, parsnip purée, pickled mustard seed. As a starting point for a plated multi-course winter dinner.

Caviar Service

Caviar Service

Royal Ossetra, traditional accoutrements, blini, crème fraîche. One of countless ways we can elevate a cocktail hour or welcome reception.

The MileHighCook Difference

Sundance Catering, Built Around You

While most marketplaces, resort F&B teams, and volume operators rely on coordinators or printed banquet sheets, every MileHighCook event is built around three principles.

One Chef,
Not a Coordinator

Chef Steve plans and runs every event personally. No sales coordinator. No sub-contractor. The person you talk to on day one is the person on-site the night of.

Your Menu,
Not Their Banquet Sheet

Every menu built from scratch around your guests, your venue, your season. No package tiers. No printed banquet kit. No “pick three from column A.” Yours, not ours.

Sundance Institute Lab participant hosting (Director's Lab in June, Screenwriter's Lab, Theatre Lab) typically books 3-6 months ahead and follows the Institute's program calendar. Mountain weddings (June-September peak) book 9-12 months out for the Sundance Outdoor Pavilion and the most desired Aspen Grove estates. Sundance Film Festival overflow (mid-to-late January, when Park City accommodations max out) is among the tightest weeks of the Provo Canyon calendar and books 4-6 months ahead. Multi-week December-January family hosting locks 3-9 months out. Earlier booking gives you better access to chef availability.
Yes — the Sundance Outdoor Pavilion is one of our defined Sundance wedding venues, and private residences in Aspen Grove and along Provo Canyon are the dominant venue type for our Lab and patron hosting. The Sundance Mountain Resort itself runs sophisticated in-house F&B (the Tree Room and the Owl Bar are local institutions); what we add is private estate catering and Lab-participant programming inside private residences rather than competing with the resort's program.
Our All-Inclusive proposal covers chef and culinary team, all ingredients (heavily Utah Valley locavore-sourced when seasonal), prep, cooking, plating, professional table service (servers, bartenders, attendants), equipment and rental needs, travel from the Provo and SLC supply chain, and complete post-event cleanup. No hidden fees, no shopping surcharges, no add-ons after the fact. Sustainability-aligned sourcing is built in rather than offered as an upcharge.
Plant-forward is the default at Sundance, not an accommodation. Sundance Institute participants, Aspen Grove residents, and conservation-philanthropy patrons routinely specify locally-sourced, sustainability-aligned, and substantially or entirely plant-based programs. We build menus around Utah Valley produce (Heber Valley, Provo Canyon, Wasatch Front farms), sustainable proteins where used, and a vegan-and-vegetarian-first design philosophy where the situation calls for it. Sourcing transparency is part of the proposal — clients here actually read it.
Sundance's location 30 minutes from Provo and 45 minutes from SLC gives it a much better supply chain than its remote feel suggests. Utah Valley locavore sourcing is one of the program's strengths — Heber Valley produce, Wasatch Front farms, Provo Canyon producers, and regional Utah lamb and proteins are routinely seasonal. Specialty out-of-region ingredients come via the SLC supply chain with routine lead times. The advantage of Sundance over more remote markets is that ingredient quality at the highest tier is fully accessible without the logistics premium.
Yes. Plant-forward and vegan are the most-requested categories here (and our default design philosophy for Sundance). Gluten-free, dairy-free, nut-free, anti-inflammatory, sustainability-aligned, and complex layered restrictions are all standard. The Sundance client base is more dietary-restriction-engaged than most of our footprint, and the questionnaire phase is typically more detailed.
Yes — Sundance Film Festival overflow (mid-to-late January) is a recurring category. When Park City Old Town and slopeside Park City book out, Sundance Mountain Resort residences and private Aspen Grove and Provo Canyon homes absorb spillover demand from studios, brands, and film-industry visitors. Multi-day chef-in-residence stays, brand activation dinners, and 20-50 guest evening dinners are the most common formats.
Yes — confidentiality clauses and NDAs are standard for Sundance work. Sundance Institute Lab participant hosting (some Labs are explicitly confidential), film-industry overflow during festival week, and conservation-philanthropy patron dinners all routinely involve discretion requirements. Tell us your standards and we'll execute accordingly.
We serve Sundance Mountain Resort residences, Aspen Grove, Provo Canyon, and ranch and estate properties extending toward Heber City and Midway. Travel from the Provo and SLC supply chain is built into the All-Inclusive proposal — you won't see distance surcharges added separately.
Reschedules are handled case-by-case. Generally: 90+ days out, full deposit transfers to the new date with no penalty. 30-90 days, partial transfer with a re-stocking adjustment. Less than 30 days, the available remedy depends on the date, the locavore ingredient sourcing already in motion (some seasonal programs are difficult to substitute), and team scheduling. Sundance Film Festival overflow week reschedules are particularly tight given the demand peak — we'll always be transparent about what's possible.
