The format runs structurally differently from a 100-guest wine-paired plated wedding: 200-500 guests, alcohol-free, station-format reception food refreshing across a 3-4 hour service window, ward-community attendance, extended-family programming. We plan station counts and rotation around expected guest flow and provide enough chef-side production capacity that the food doesn't go static during the long service window. Cake-and-punch only formats are not our specialty — full chef-driven LDS receptions are.
Summer wedding season (May through September) at any signature Salt Lake venue typically books 9-12 months out. Larger LDS receptions of 300-500 guests often book 12-15 months ahead given the family-coordination scale and the rental-equipment lead times for that guest count. Christmas and New Year weddings book 9-12 months ahead. The earlier you start, the more chef and team flexibility you have. We hold dates with a deposit.

Alcohol-free pairing is a sophisticated culinary specialty in its own right — layered fresh-press juice and shrub combinations, fermented teas, sparkling vinegars, infused waters, agua frescas, and proper non-alcoholic spirits. Without a wine program, the menu has to do more of the work and the alcohol-free pairing program has to be intentional. We approach it that way as the default, and it's why many alcohol-free Avenues, Holladay, and Silicon Slopes weddings choose us specifically.
